Apple Pie
Pie Crust:
1 1/2 C flour
1/2 tsp. salt
1/2 C Crisco
3 Tbl. water
Mix and refrigerate for 30 minutes before rolling out.

Pie Filling:
3/4 C maple syrup
2 Tbl. flour
1 tsp. cinnamon
2 Tbl. butter
Preheat oven to 425*F.
Mix apples and cinnamon in a bowl. Place a layer of apples over the crust in the pie dish. Sprinkle a little flour over the apples, and pour on some syrup. Repeat layering. Place crust cover over apples, seal crusts with water at edges; pinch together.
Bake at 425*F for 45 minutes. Turn oven off, but leave the pie in for another 45 minutes.
Maple Shortbread
Dough:
1 C unselated butter, at room temperature
1/2 C pure maple sugar
1/4 C granulated sugar
1 tsp. salt
2 tsp. maple syrup
2 1/2 C unbleached all-purpose flous
Topping:
2 Tbl. pure maple sugar
1 C unselated butter, at room temperature
1/2 C pure maple sugar
1/4 C granulated sugar
1 tsp. salt
2 tsp. maple syrup
2 1/2 C unbleached all-purpose flous

Beat butter, sugar, salt and syrup until well blended. Beat in flour. Divide dough in half, pat each into a disk, wrap well, and chill for one hour.
Preheat over at 350*F. Lightly grease two baking sheets. Sprinkle the dough and a work surface lightly with flour. Roll dough very thinly: about 1/4 inch thick. Cut cookies with a cookie cutter and place on the prepated baking sheets. Sprinkle with maple sugar.
Bake 10-12 minutes, until lightly browned.
Maple Dressing
1/4 C maple syrup
2 Tbl. vegetable oil
2 Tbl. lime juice
1/4 tsp. salt
1/4 tsp. fresh ground pepper
2 Tbl. vegetable oil

We love this on a mixed green salad with diced apples and gorgonzola and pecans!
Granola
3 C rolled oats
1/3 C sesame seeds
1/3 C sunflower seeds
1/3 C walnuts (or your favorite nut)
1/2 C shredded coconut
1 Tbl. vanilla
1/3 C maple syrup
1/3 C oil
1/2 C raisins
1/3 C sesame seeds

Mix all ingredients except raisins. Place on a cookie sheet or brownie pan, about 1 inch thick.
Bake 350-375*F 35-45 minutes, stirring twice during this time.
Add raisins halfway through baking time.
Serve with milk, yogurt, or by itself as a delicious snack!
